Banana Log with Toffee Chips

Best eaten: Always.
Always double and triple, you’ll be wanting more.


  • 110g softened butter
  • ½ cup brown sugar
  • pinch of grated lemon rind
  • 2 eggs
  • ½ cup of milk
  • 1 cup S.R. flour
  • 3 (old) bananas
  • 1 tsp bi-carb soda


  1. Cream butter and sugar with lemon rind
  2. Add beaten eggs
  3. Lightly fold in sifted flour, and then thoroughly mashed bananas
  4. Lastly, fold in milk (that’s had the bi-carb soda dissolved in it)
  5. Put into greased log tin and bake in a mod’ oven (180°C)  for 50- 55 minutes
  6. Allow to cool for 5 minutes, before turning out onto a cooler
  7. When cold, ice and rough up with a fork, and then decorate with broken toffee chunks
  8. Eat quickly, before other people hear you made it


  • 3 dsp butter
  • 2 cups icing sugar
  • 1 dsp cocoa powder
  • pinch of salt
  • 1 dsp coffee essence½ tsp vanilla

Toffee Chips

  • 1 cup sugar
  • 1 cup water
  • 1 tsp lemon juice

Place into saucepan, stir over low heat until sugar is dissolved. Bring to boil, cook until a pale amber colour. Pour into battered tin. When cold, break into pieces and insert at chaotic intervals across the log’s iced surface. Make as dense as your sweet tooth can handle.
